You will only find hold em. It's a rarity you will find omaha. Only during the series.

There are a couple of Non-hold'em tournaments around Vegas -- mostly at the Orleans, but also at Eastside Cannery & Red Rock. They are generally once a week events. Otherwise it is all Hold'em.
